River Rat Brewery®, the largest beer production company in Columbia, South Carolina, has announced an exciting venture in barrel aging. The new “Sleeping Barrel Cellars®” brings exceptional diversity to River Rat’s traditional barrel-aged beers.
River Rat uses a variety of barrel types to create the finest blends, Wine, bourbon, tequila, and other unique barrels found deep in the brewery’s catacombs produce an unmatched flavor. Unearthed from their subterranean slumber, these rich barrels create beer that can awaken even the sleepiest of palates.
River Rat’s brewmaster tastes each unique barrel and carefully blends the finest of each batch into the final product. After honing the brewing technique for three years, River Rat is proud to share the exclusive Sleeping Barrel Cellars beers with customers.






Tabasco Milk Stout: 11.2%, 30 IBU. Imperial milk stout aged in barrels once used to age Tabasco pepper mash.
Barrel-Aged Double IPA: 8.5%, 60 IBU. Our Double IPA aged in fresh bourbon barrels.
Barrel-Aged Quad: 11% 17 IBU. A deep garnet beer with sweet malty base aged to perfection in bourbon barrels.
Sir Barley Wine: Our English barley wine is a dark amber color, with notes of molasses and currant. We aged these in 3rd use bourbon barrels for a minimum of one year.
Barrel-Aged Imperial Stout: 15.5% 50 IBU. This heavy hitter has rich notes of toffy and chocolate. Aged for six months in 2nd use bourbon barrels.
Imperial Milk Stout: 11.2% 30 IBU. This stout has a generous amount of Lactose sugar added for a velvety mouthfeel and slight sweetness, which makes the coffee and chocolate flavors that much better. We aged this beer in 2nd use bourbon barrels.
Monck’s Corner: 7.2% 25 IBU. Dripping with beautiful Belgian Dubbel flavors and aromas of banana, clove, and plums. Aged for six months in fresh bourbon barrels.
